I've taken a quick look through the release notes and guides and can not see a step by step guide.
I have done this myself a few times.
In simple terms you back up the physical and restore to the virtual using the same procedure as if you were changing a physical server after failure
If you are keeping everything the same, server gateway, IP's, then there should be no more to it.
One extra step you will have is restoring from network. As the machine is virtual it has no USB ports.
Arguably you could use a CD in the VMWARE host but i find the network restore option works fine.

Restore from backup:

When the system prompts you with "Do you wish to restore from backup?", click Yes.
a.
Select Restore from Network Server.
b.
You will be prompted to select a network interface to use for the restore (LAN or WAN), the address and netmask of the local MSL server, the address, gateway and domain name of the backup server, the folder name containing the backup file, and the username and password required to log in to the backup server.
If you are changing to or from "server-gateway" to "server only" that makes it more difficult.
