Just wanted to follow-up on this one. Mitel got back to me, they state that this was the first they were seeing of my particular issue. They said that the work around we were doing is the only way to get those users to delete. We did further note that creating new users and deleting via the vMAS worked with no issues. It was the existing user database that needed to be deleted from the vMCD's "Telephone Directory" first, after that deleted with no issue via vMAS.
What we were using as far as versions:
vMCD: 7.2
vMAS: 6.0 (Went to 7.0 the rolled back to 6.0 - 7.0 apparently is not supported for Service Providers)
