[Solved]

Alright, I finally go this working yesterday and it has been stable for 24 hours now so I am going to say it is good to go; here is what I had to do.

I reconfigured the MBG server to have [2] LAN NICs instead of the [1] LAN NIC and [1] WAN NIC that was used for just the SIP Trunks. I set the Default Gateway to be on the LAN NIC that I expect all default traffic to out of to get to the Internet; so not the SIP Trunk gateway.

Reconfigured the server to set both NICs to be LAN NICs as follows.

Remove WAN NIC programming then Reboot.

Go back and made sure the following was set.
LAN NIC 1: Voice Network <- This has a public IP NATed to it
LAN NIC 2: SIP Provider Network
Gateway: Voice Network Gateway

[Reboot]

Made sure there was an entry in Networks for LAN NIC 2; otherwise this won't work.

Then I went into the Network Profile and created a Custom Mode Profile
SET-SIDE Streaming Address: Public IP Address pointed to LAN NIC 1
ICP-SIDE Streaming Address: LAN NIC 1

After that I went to SIP Trunking and set the following.
Remote Trunk Endpoint Address: Carriers LAN IP Address
RTP Address Override: Third Interface [LAN NIC 2] <- IF this is not on the same network as the Carriers IP Address then that is where the Network entry comes into play!!

After setting that all up I Stopped and Started the MBG Service as required due to the RTP Address Override.

I then rebooted the server one last time and tested. Everything worked as expected!!
