I have a MiCollab server version 6.0.205.0, which says it has MiCollab Client Service 6.0.507.0
When I go to "Install Applications" it shows me 3 minor updates.
If I look at one of them, it tells me it has MiCollab Client Service 6.0.509.0 in it.
My question is, if I click "Install", thus upgrading my MiCollab Client Service from 6.0.507 to 6.0.509, will all the MiCollab Clients on the desktops continue working, or will I have to re-deploy a new MiCollab Client version to all the desktops?

This doesn't directly answer your question, but when we went from version 6.x to 7.x on the server the version 6 client still worked for those that couldn't, or didn't accept the update on their desktop.

Not likely... look at the release notes and see if there is a new client version. If it doesn't specify, you can open an informational only ticket with Mitel if you are a certified tech.

Well, there aren't any release notes for the .206. .208. or .209 updates.
They should be linked to in the MiCollab server Installation page.
This is why those updates have been sitting there uninstalled for months/years. You can't install updates without release notes.
