Our call flow will play a greeting after the office closes at 5 pm. How would I go about recording a new greeting to play in place of the current one?
Thank you for your help!

Unfortunately, without more information this question is difficult to answer... Let's start with which voicemail system do you have, embedded, Nupoint, or something else?

Sorry..Nupoint

Sorry..Nupoint
So the most common way is if you know the Call Director Mailbox, log into MiCollab, go to to the NuPoint Web Console, and Edit Call Director and see what the recording number is (unless you already know it), then log into that mailbox and go to the Call Director menu and change the appropriate recording number.
If you don't know the call director mailbox, you are in for a bit of digging in the Mitel to find out the call routing and figure out what mailbox it's using.

Here is my method - YMMV:
MiCollab Server/NuPoint Web Console/Call Flow
1. Enter The Mailbox for your main line.
2. You'll see the call flow for your auto attendant.
3. Select Actions/Recordings from the top toolbar.
4. The Recording Status screen will open with a list of menus that currently host recordings.
5. Find the entry for your main line - probably labelled "Open Menu" or "Day Menu"
6. You can Record or Import from this screen - I use Import.
Here are the specs if you are going to import a recorded greeting file - we use Goldwave to record greetings:
File Type: WAV u-Law, 8000 Hz, 64 Kbps, mono
There may be other variants of a WAV file that are permitted, but this one always works for us.
