Is there a way to see all the information about an extension in one place (call routing, does it belong to a hunt group or ring group, etc.) , rather than having to go the hunt group node, the ring group node, etc. ?

No. There isn't.
What I usually do is export the relevant forms so I can do searches in Excel.

I have one extension that appears to be forwarding to another, but there's no call forwarding profile for it and they don't have a call forward button on the phone. I can't find it in any ring or hunt group. Any ideas where to look?

First place to look would be in the maintenance commands.
Enter Locate Feature Ext <ext>
It will show you if the user did anything to the phone.
Next is in the call rerouting forms to see if it's rerouted.
Also, if you're using UCA then there is a change it could be forwarded there.

You might also check the <system speed calls> form. It could be set to forward from there?
-
Locate_Feature Extension just shows basic information about the phone, not showing any changes. It is not listed in the call rerouting forms or the system speed calls. The user does not have UCA, so it's not being rerouted there. Any other ideas?

Multicall/key system key? Set to delayed ring.
