We currently have MCD 5.0 (3300ICP) at the office. A manager has asked how we can call a SIP URI (for example sip:jbloggs@sipprovider.com) from our Mitel phones.
I have never done this and am not sure if it's doable. We have just migrated to a Telstra SIP service but they are no help. Has anyone done this? Do we need additional software/hardware?

You want to dial the SIP URI directly from the phone? I don't believe this is possible. The system can have SIP phones, and take advantage of SIP trunks, but is not capable of dialing SIP URI's to my knowledge.

I thought there was SIP o URI translations somewhere although I have never used it.
I believe it translates a DN to a URI for Office Communicator and the like.
