We had wanted to preserve voice mails on a previous employee, so we had simply renamed the phone accounts.
Now when a call switches to the voice mail, it shows the previous users name.
I have tracked this in DB Programming to: System | Devices and Feature Codes | Phones | Local | ext | mailbox
But I can't edit this.
Is there anyway to rename the description and username for this?

Rename the Username field under System > Devices and Feature Codes > Phones

To clarify Hovus's answer a little better go to System > Devices and Feature Codes > Phones > Local
And before opening up the extension just single left-click in the Description and Username Fields to change them.

It's not letting me access the fields to edit them.

I got it. I was in the wrong place!
First, On-Line Monitor had to be enabled
But I was able to edit at: Voice Processor | Devices | Mailboxes | Local

You're asking for trouble if you renamed the mailboxes through Voice Processor. If you just rename the users under Phones, the mailboxes associated with those users will also be renamed. You're trying to reinvent the wheel...
Expand System > Expand Devices and Feature Codes > Left click on Phones on the left pane > Left click on the individual Username

That area was already correct. For some reason when the old user was renamed the mailbox didn't rename.
I don't know how it was renamed originally.

More than likely the voicemail box was corrupted at some point or it is not an associated mailbox. Are the extensions for the mailbox and the phone the same, if so it is corrupted and it would be best to delete it and create a new one. If they are not then the phone's extension may be associated with a hunt group since you can assign it to another phone.

Renaming mailboxes and users independently can cause you issues, this is why it is in the online monitor (see the big warning window?)... it is best to delete the mailbox and recreate it if the mailbox and phone usernames/full names do not match.

To delete, just delete the mailbox and create a new associated mailbox?
