Is there any way to find out what mailboxes have cell phone or fax details programmed into them?

You can't on a MCD system.

You can try an export to Excel.
I don't remember if those fields export or not.

I have tried an export and no joy there so looks like I'll have to trawl through ringing each one in turn.

turn it off for all extensions, I would guess you would soon find out extensions that have it set.... :)

Can also be done system wide by disabling personal contact numbers from the system administrator mailbox. (courtesy of Lundah).

I thought I had disabled them from the Administrator mailbox, but people who have set it still play out the message.  Would it only affect people who try to set it from now on?
