We have a user that works across the room form her phone and would like it to ring a few more times before it goes to voice mail. Is there an easy fix for this?

Copy her existing COS to a new one.
Then change the Call Forward No Answer Timer.
Then assign the new COS to her.

The bummer part of this is that if you make changes that you want to affect everyone, you have to make changes in multiple places. However, tis the nature of the beast :)
