Right now we record out incoming analog lines with software from Hansen. It works very well.
We've had requests to also record inner office conversations between phone stations, though I'm not certain if this is technically possible using 3rd party software.
Any one know if this would technically be possible and how one would go about handling this form a technical perspective?
And yes, I know this is an odd topic, but it's actually been requested by staff as many numbers and agreements are made verbally on the phones between staff and there has been many instances where they asked to recall inner office conversations. It would be fully transparent that the inner office calls are being recorded at all times for all staff and would be added to the staff handbook.

Yes, you can record intercom calls in two ways if this is truly a MiVoice Office 250 formally known as the Inter-Tel/Mitel 5000.
1. Set your call recording up for station side recording. I had to look up Hansen as I never heard of them but they only do line side recording. Unfortunately for you Mitel no longer sells their Call Recording software to allow you to do station side, but there may be other vendors out there that still do. Maybe look at Xarios Call Recorder or Phone Manager which is what Mitel rebranded as MiVoice Office Communication Service.
2. Have the users record the Intercom calls via the system feature Record-A-Call that records the call to the users Voice Mail box.
