Is there a way to disable the Call Director tab in the user web portal on Nupoint?

You could disable Mailbox CoS option 292?

We want the mailboxes, well some of them, to have Call Director... we just don't want the users messing with it themselves.

Disable the Option in the COS you apply to mailboxes by default, then copy that CoS to a new CoS number, in that new COS enable option 292 and change to the new CoS for any mailbox that you want to have Call Director in.

That is literally what I did... great minds think alike I guess.
