Set up alarms for critical to email yourself, you would normally get an email when recording fails which will give you a clue to the issue

Sounds like you have an incorrect address in your IP Trunking forms, you will need to correct this and reboot the system if you want to correct it.

I have been using Windows 10 for some months now with no issues, for Older Mitels I use IE Tab in chrome or Firefox

1st thing to do is check you do not have a proxy enabled and if you do disable or bypass it.
The Client uses a transcript file which I cant remember the location of at the moment, It compares this to the one on the server and if they dont match it attempt's to download a new version.

It is only usable on the latest Micollab version and requires you to use the deployment option, You will also require certificates on your server to get it to work.

Turning off Voice Encryption will only allow you to replay the voice stream it wont allow you to view Minet packets as these are proprietary, The only way to do this is to use the minet dissector if you can get hold of it, However there should be no need for this to diagnose voice streams.
Decoding the Minet will give you call control info like Call Put on Hold etc.

Plug a pc in the back of the phone and turn on the port mirror function this will give you enough to diagnose audio issues, Minet packets will go to the controller and will not be in readable form anyway

Had the same issue with an older version of Visio installed that wasnt part of my 365 subscription, Doesnt happen on PC's that have latest Visio installed and on 365.

Yes its absolutely possible, I have it working here. You will need to add an an Inbound connector to your 365 Exchange portal (Under Mail Flow) and allow relay from certain addresses.

You would need to be careful here but you could try the setting the option in COS public trunk to Yes, you may loose some functionality between sites hence the warning.
I have also used account codes previously to monitor outbound traffic on IP trunks in a similar situation but the numbers I was dialling were preset and I created a speedcall that had the account code plus feature access code in it then reported on that.
