There isn't really a customer facing document detailing what you are after, I have a full flow chart of what you can do with the buttons on the front panel I can dig out if you want?

You could alter it to just show what you are after?

Check under Voice Processor / Devices / Applications

One of the entries under here should be labelled Voicemail, with a device number to the left.

If you aren't using your DHCP server to issue the address of the Mitel 5000 you need to enter this address under ICP IP Address in the phone config.

Your maintainer can set the default volume on your endpoint in Online Monitor mode.

It may be because your handset isn't officially supported it isn't remembering your volume settings.

Once the phone is in Headset mode as above use the speaker phone button to answer and release calls.
