Is there a way to deploy Mitel Mivoice for Skype for Business msi file quietly to include MiColab server so it can be deployed using SCCM / Group Policy?

Yep ,

Download the msi micollab client for Skype , then edit the msi file using an msi editor like "Orca"

edit the msi "property" table. add a property of UC_SERVER_HOSTNAME with a value of yourfqdn.com

Deply usinf UCA.MSI /qn

you can also change the UC_LANGUAGE.

Then deploy the new msi using GPO.

We have been trying to get this packaged with SCCM as well. We can get the servername populated, but would also like to get the username and a default password so it is completely silent to the end user. We haven't had much success at getting username and password- also, with Windows 10 and McAFee policies, we are noticing that the app installs to appdata directory and our policies restrict this so the profile files are deleted after deployment. Trying to get an exception on this corp policy now.
